I am writing to you in appreciation of the special cake that you made and iced for us for our 25th wedding anniversary. First of all the cake presentation was stunning. The roses were so lifelike. It was such a shame to cut it up. The fruitcake on the bottom was a favourite with all our guests and the special gluten-free fruit cake as the top tier was just wonderful. With the gluten-free cake, I was very impressed, as it is so difficult to make a gluten-free cake that does not crumble. Thanks again for all your help.

Welcome to
Cakes By Mindy, and thank you for taking the time to visit
my website. Firstly, just a little about me. I have always
wanted to make Wedding Cakes, and have as a child enjoyed
decorating anything I could get my hands on. I participated
in a Wedding Cake Icing Course just over six years ago, and
have since learnt about making flowers and decorating with
more detail. I've also been lucky enough to have handed to
me some award winning recipes for fruit and mud cakes. It is
my pleasure to be able to share these beautifully baked
cakes with my clients. The most rewarding part of my day is
handing the cake over, and seeing the expression of
excitement on peoples faces.
I have been decorating cakes for just over six years now,
and enjoy every minute of it. I love trying new ideas, and
learning new techniques. So please, let me in on your wild
ideas for your perfect cake, I'll endeavour to put your
ideas to cake and icing.
